ingredients:
1/2 cup butter
1 1/2 cups packed brown sugar
2 large eggs
1 cup canned pumpkin
1 tsp vanilla
1 tsp lemon peel
1 tsp lemon juice
2 1/2 cups Flour
3 tsp baking powder
1 tsp salt
1 1/2 tsp pumpkin pie spice
1/4 tsp ginger
1 cup chopped walnuts
directions:
Cream sugar, butter. Beat in eggs one at a time. Stir in pumpkin, vanilla, lemon peel, lemon juice.
Resift flour with baking powder, spice and salt, then blend into butter mixture. Drop by large tbsp on greased baking sheet.
Bake @ 375 for 10-14 minutes
Icing:
1 stick softened butter
1 8 oz. package cream cheese
1/2 t. vanilla
1/2 t. salt
2 cups powdered sugar
(you may also add a little lemon rind and lemon juice to icing)

Pizza Crust
Makes 4 pizzas
3 ½ Cups Flour
1 T. Salt
1 T. Sugar
1 ½ Cups Hot Water
2 T. Yeast
3 T. Virgin Olive Oil
1 Egg
Corn Meal
Pre-heat pizza stone 1 hour early at 500°
Mix in a large bowl flour, salt, and sugar & set aside. Mix water and yeast in a small bowl, wait 5 minutes and add oil. Add yeast mixture to flour mixture, and then add the egg. Knead until dough is all mixed and cover bowl to allow dough to rise for 30-45 minutes.
Pound down, divide into 4 balls, and let rise again for another 10 minutes or until dough is flexible. Roll individual balls on a floured surface into circles. Transfer dough to a pizza board that has corn meal sprinkled on it. Add pizza sauce, basil, toppings, and cheese. Shift pizza to pizza stone and cook for 8 minutes or until the crust is brown and the cheese is melted. Enjoy!!

Chicken Broccoli Cheese Soup
Serves 10
Ingredients:
6 Boneless/Skinless Chicken Breast
3 chopped carrots
3 chopped celery sticks
1 chopped yellow onion
1 square butter
1/2 Cup Flour
1 qt (4 Cups) Milk
1 16 oz. Velveeta Cheese
1 large head broccoli steamed and cut up
Lemon Pepper
Salt and Pepper
Lemon Juice
Directions:
Boil chicken until thoroughly cooked, cut into cubes, and set aside. Save broth water from boiling chicken and boil carrots, celery, onion, and Lemon Pepper in broth water until veggies are soft. Strain veggies from broth water and set aside.
In a large pan melt square of butter and add flour to make a roux. Slowly add milk and stir. Add Velveeta cheese and stir until melted. Fold in chicken and veggies. Add salt, pepper, and lemon juice to taste. Enjoy!

Apple Sauce Muffins
Makes 1 dozen
Preheat oven to 425°
Ingredients:
1/2 C. Butter (soft)
1/2 Cup Sugar
2 Eggs
1/2 t. Salt
3/4 Cup Apple Sauce
1 T. Baking Powder
1 3/4 Cup Flour
directions:
Cream together Butter and Sugar. Once smooth, add Eggs. Then add all other ingredients until mixed well.
Fill small muffins tins half way with batter and bake at 425° for 15 minutes. If not using muffin cups, grease muffin tins.
While baking, melt 1/2 square of Butter in one bowl and mix Cinnamon and Sugar together in another bowl. When muffins are cool tip upside down into melted butter, then dip into Cinn./Sugar mixture. Enjoy!
